SUMMERY STRAWBERRY PANCAKES
What’s better than pancakes? Pink and fluffy, sweet and Summery Strawberry Pancakes!
James is on a pancake kick, so this recipe had to be quick and easy enough to make on weekdays. If you can open a box of pancake mix and use a blender, then you can probably make these!
Using Boxed Pancake Mixes
Pancakes are one of the few foods I don’t make from scratch. There are plenty of healthy, high quality mixes out there that not only speed the cooking process, but also create a fluffier, more uniform. Birch Benders’ Paleo Pancake Mix is my hands-down favorite, and it’s what I used when testing this recipe. Its nutritious base of almond, coconut, and cassava flours isn’t dry or sticky like many other gluten-free pancake mixes I’ve tried. In fact, the texture is so spot-on that Scott was shocked to learn they’re grain-free! I was also excited to discover that Costco now carries this product in a whopping 42 ounce size.
If gluten isn’t a problem for you, I also really like the original Kodiak Cakes Frontier Pancake, Flapjack and Waffle Mix. These cook up thin and hearty, and are delicious with fruit on top. I’ve also tried their protein-enriched version but didn’t like it as much, likely because it uses gluten protein. Not only does this irritate my stomach, but I find it makes the pancakes heavier and a little sticky. If you’re looking to make protein pancakes, I recommend adding a scoop or two of your favorite collagen or protein powder instead.
You only need a few ingredients to make Summery Strawberry Pancakes:
Fresh or frozen strawberries
Collagen powder (optional)
I incorporated freeze-dried strawberries because I found that only adding fresh made the mix heavy, watery, and not quite strawberry-y enough for my taste. Trader Joe’s stocks reasonably priced organic freeze dried strawberries, so I suggest getting them there. You can crumble the leftovers on top, or mix them into trail mix. If you have a toddler, they’re also a great add for cereals and snack mixes.
I also used Vital Proteins Collagen Peptides in my recipe. Your pancakes will turn out just fine without it, but I like the added protein and enjoy the gut-soothing, skin-strengthening benefits of using a collagen supplement.
These Summery Strawberry Pancakes are perfect when hosting overnight guests, or on random weekdays when you find yourself with an extra five minutes in the morning.
