Do you ever stand in front of your fridge after dinner staring at its fully stocked shelves without seeing anything you want for dessert? That was me this week. My eyes kept falling on a batch of freshly made Chocolate Chip Cookie Dough Bites, but I ate so many when I was recipe testing that I was feeling a little bored.

So I decided to give them a chocolate covered twist!

The result: crunchy and chocolate-y, naturally sweet Chocolate Chip Cookie Dough Cups. They’re gluten-free, vegan, and perfect when you’re craving something sweet in a pinch!

Tips For Making Cookie Dough Cups

The recipe for my Chocolate Chip Cookie Dough Cups is nearly identical to my original Cookie Dough Bites with one key addition: loads of dark chocolate. I used a double boiler to melt Enjoy Life Dark Chocolate Morsels into a silky, smooth coating for silver dollar sized discs of cookie dough.

These are delicious even you make them quickly and they look a mess, but if giftworthy candies are what you’re after, then I have three tips for you:

  1.  Use a rigid wrapper. While you could simply dip the cookie dough into the melted chocolate, I’ve never had any luck doing that artfully. That’s why I recommend a mini muffin pan with foil or silicone liners. Even with the muffin pan to hold the candies’ shape, the paper liners flatten when you pour in the chocolate. This leads to an oddly shaped, not-quite-ready-for-prime-time chocolates.

  2. Break out the pastry bag. While spooning in the melted chocolate works just fine, using a pastry bag is much more precise. It also makes it easy to create those cute little dollops on top.

  3. Size matters. Make sure you’re shaping each disc of cookie dough almost exactly the same, paying particular attention to height. Remember: there should be more cookie dough than chocolate, so don’t make them too thin. 

Truthfully, though, these Chocolate Chip Cookie Dough Cups are pretty foolproof. Because once you put chocolate and cookie dough together, there’s very little you can screw up!

How to cook Chocolate Chip Cookie Dough Cups

  1. Use a double boiler or microwave to melt the dark chocolate. Meanwhile, line a mini muffin pan with 12 silicone or foil liners.
  2. Shape cookie dough into discs 1 inch wide and ½ inch tall, making sure each one has at least a couple mini chips mixed in.
  3. Using a spoon or pastry bag, cover the bottom of each liner with about a teaspoon of melted chocolate.
  4. Place one disc of cookie dough on top of the chocolate in each mini muffin liner. Then top each one with a thin layer of chocolate, making sure it also runs down the sides to cover the edges.
  5. Refrigerate for 30-45 minutes until set, then enjoy! Store refrigerated in an airtight container for up to a week.
