GOLDEN PUMPKIN SMOOTHIE
I love packing my smoothies full of veg. But with fall in the air, I'm taking a welcome break from the usual green concoction and filling my cup warming pumpkin and turmeric. Meet my Golden Pumpkin Smoothie! It's packed with fiber and healthy fats, inflammation-busting turmeric and honey. Basically, it's fall in a glass!
How I Balanced My Golden Pumpkin Smoothie
I had the pleasure of interviewing nutritionist and author Kelly LeVeque last year for Well + Good, and we had a great conversation about smoothies. LeVeque says fruit-based smoothies don't satisfy most people because they're too high in sugar. Instead, she focuses on protein, fat, fiber and greens (the "Fab Four") to elongate the blood sugar curve and keep her clients satisfied.
I loosely applied Kelly's Fab Four concept when I created this healthy recipe. Cashew butter and MCT oil fuel my furnace with healthy fats, while fiber-full pumpkin and protein-packed collagen keep me satiated. I used nutritious cauliflower instead of greens, which also adds creaminess. Then I added energizing cinnamon and tummy-taming ginger to fire up my metabolism.
And That Color!
I've been battling breakouts these past few weeks. So I'm helping my body heal with inflammation-busting ingredients like the turmeric in this pumpkin smoothie. This activates the curcumin (the immunity-boosting, inflammation-busting chemical found in turmeric), which isn't bioavailable by itself.
